A graduate of the School of Theatre Arts, Taipei National University of the Arts, where she majored in performance, Choi is active across theatre, television and film. Her stage performances include Hong Kong Repertory Theatre A Dream like a Dream, Looking for a Man and On that Distant Planet, a Grain of Sand at the Taipei National University of the Arts, Stream's A Strange Land and The Party Theatre Group's COCK.
 
Her screen work includes ViuTV's Short Marriage, Netflix series Triad Princess, and Taiwanese films Pigeon Tango, Fall in Love at First Kiss and Back to School.
 
Her first starring role in a Hong Kong film, Beyond the Dream, won her the Best Actress award at the 26th Hong Kong Film Critics Society Awards.  She was also nominated for the Actor of the Year at the Hong Kong Screenwriters' Guild Awards, and for Best Actress at the 39th Hong Kong Film Awards.
